While I don't believe chats moving to quickly is a reasonable excuse to get out of character and react to an extreme to anything, I suppose I can help?

Like Light-mun said above, you need to pace yourself. Chats tend to go pretty fast sometimes but nobody is going to forget about your guys there if you don't respond right away. I often take a second to scroll up and re-read things in a chat before responding to make sure I got everything right and I find it's a really helpful to do. Another thing is that chats get especially hard if you're juggling more than one character around. If you have three characters going at once and they're all talking to different people it can get incredibly easy to loose track. Perhaps you could keep them doing simple things like have one eat food while the other carrys out a conversation so it's easy to keep track.
