I'd say number one. Two is too red/pink, looks overstaurated, and three is nice, but it looks a lot less contrasted than it should be, if that makes sense. Number one is nice--could be a bit brighter, but it looks the cleanest.
But then again, remember that you're never going to be able to use the same technique on every icon, so I'd say go with what works best for each cap.
