What's up, y'all? I feel like I haven't updated in ten years.



I started a new block at school last Monday. We're done with the basics and from here on out, we're not learning anything new. I have six weeks of learning how to plate desserts for upscale, fine dining restaurants, then wedding cakes for six weeks, sugar work for three, and chocolate for three and then I go on externship from September 29 - December 18 and graduate in January! I know that's still forever away, but it feels like it's right around the corner. As far as my personal life, nothing's new lol. Well, that's half true. I'm no longer friends with my former BFF's (that I've been BFF with the last five years). It sucks when you stop having things in common with your BFF's like that, but I want to do things with my life and they're content flipping burgers (literally) for the rest of theirs and I just can't relate to them anymore. Things on the boyfriend front are still cool. We had our six month mark on Mother's Day and he bought me a diamond necklace. I've never gotten jewelry before! We saw my family yesterday and my brother, over dinner, asked if we'd talked about getting married yet. WAY TO MAKE THINGS AWKWARD (but yes, we have talked about it, and plan on getting hitched after graduation. he still wants it to be romantic and a surprise though. I'm a silly girl and picked out my wedding dress lmao)The boyfriend shaved his beard, to my dismay, and is growing in chops. UGH. He asked my permission which was silly. I said he could do it and here we are...And I HATE it ahahaha. Oh well. I love him dearly so it's whatevs. Okay, okay. Picture time.


My first plate up.
Lime Panna Cotta with a blackberry glacage, blackberry compote, blackberry sorbet ( I wanted to make lime but we ran out of lime puree, LAME), a lime chip and candied lime zest. It was alright. I got a 95 out of 100 on it (each mistake is worth 5 pts.)

Tomorrow I'm going to make my version of a Reese's PB cup.
So it will be a milk chocolate lava cake, the lava being a peanut butter ganache. Plated with a peanut cream and chocolate sauce design on the plate, peanut butter ice cream, a cocoa nib tuilles, candied peanuts, and a chocolate cigarette. I'll post a picture tomorrow after I make it and it'll probably make more sense lol.

For all our plate ups we have to create everything on our own. We're just given a theme and have to GO GO GO. It's crazy but I love it so far.
