As you all will soon learn, I love cooking chicken. I cook a lot of chicken because you can do anything with it.

Recipe!

Name of recipe: Pineapple Glazed Chicken

Total prep time: 4-6 hours

Total cook time: 50 minutes

Ingredients:
1. 3 boneless, skinless, chicken breasts
2. 1 can pineapple slices
3. 2 tblspoon lemon juice
4. 1 tblspoon oregano


Instructions:
Step 1. Place chicken in shallow dish and mix in full can of undrained pineapple slices, and lemon juice. Marinade for several hours.

Step 2. Preheat oven to 350 and transfer chicken to baking dish top with pineapple slices and brush over glaze. Place marinade to side.

Step 3. Bake chicken 45 minutes or until juices run clear, brush marinade over chicken every 10 minutes while baking.

Step 4. After chicken is cooked fully, move to frying pan - I cut mine up first - to brown chicken and pineapple slices.

Step 5. Served with baby spinach in lite italian dressing and brown rice.

Talk about the taste of your food: The chicken turns out slightly sweet, only a hint of tang. I recommend cutting up the pineapple slices and mix into the rice and try with the chicken.

I've made Pineapple Chicken before! I grilled it though. Served it with eggplant and asparagus! :)
