Morgan Le Fay was not a witch, she was a sorceress. There was a big difference and she would have blasted Mordred for calling her a witch, but there were other things to focus on. Like blasting Arthur's forces to bits.
She watched a blast of energy go through one of the fliers and realized they were illusions. She wasn't going to be fooled again and waited to see which ones attacked the cannons. As soon as one did, she sent bolts of mystical energy at them.
