Make Your 5G/5.5G iPod Look Like iPod classic
I first saw this on Digg so I thought it would be really cool to try out. The developers tell you to use an application called iPod Wizard to put the firmware onto the iPod but I've found out that alterPod works just as good if not better. iPod Wizard is actually a Windows application.

Anyways, if you head over to this website you can snag the firmware. Download it and load up the file called 'iPod Classic for 5G' into alterPod and hit the Restore button. It'll take about 30-45 seconds, once done, the iPod reboots and it should take on the look of the iPod classic. Of course it's not 100% like the iPod classic firmware, but it's definitely a good proof of concept.

I noticed that menus are slow to load and that the album artwork doesn't automatically show up, you have to go into the song, and then in the listing it'll show up.

As is right now, it's pretty cool, but it definitely needs some work. If you happen to brick your iPod in the process, just force reboot it (hold down menu and select buttons) and then hold down select and play/pause buttons to boot into disk mode. From there you can restore the original firmware.

Download alterPod.
