I remember some time ago you were talking about how you had some jaw condition (or at least, it affected your jaw). Can you tell me what this was and what you've had to do about it?
What made you want to go to culinary school?

I have TMJ Disorder. It has to do with the joint that connects your upper and lower jaw. My lower jaw is off center and combined with a head injury as a child and teeth grinding, I've worn out my joints. My mouth only opens half an inch which makes it really hard to eat and talk. And because of the inflammation, it swells up my ear canals so I don't hear well either. I also get really bad migraines :( it really, really sucks. I haven't been able to do anything about it because I don't have the money. At this point I'll need surgery where they'll break and reset my jaw and then wire it shut, but first I'd have to get braces to move my teeth over so that once my jaw is reset, my teeth will align. That means I'd get much worse before I get any better and I just don't have the money or time for surgery. Right now I do mouth exercises every day and take lots of excedrin...

Culinary school... I tried to go to school for other things first, and nothing really stuck. I finally asked my parents if I could go to school for baking and after a lot of arguments, they agreed. I just love being in a kitchen. Pastry arts is my passion! I can't imagine doing anything else with my life.

Thats awesome that you just decided to go for baking and ended up loving it. I have no idea what I would do if I went back to school, and baking is something that always floats around, so how was school for you? Did you have a lot of experience before you jumped in? Was it very challenging and stressful? What advice would you give to someone who is thinking about culinary school?

School was amazing! I didn't have a ton of experience. I baked at home a lot for my family but never did anything professionally. It was challenging and there was so much to learn, and I still have so much to learn! But it's all incredibly rewarding. My advice would be to really research schools and their instructors. And it's not like tv... It's not all cupcakes and cookies. There's a lot of math and science and history and if you aren't passionate about it, then don't do it. But that goes for everything you do in life. Just be passionate about what you do!

would you consider leaving the country if some really good hotel offered you a job overseas?
were you interested in baking (or making desserts in general i guess) growing up?
is there anything other than baking/cooking you learned in culinary school?

haha my dad was wondering if i should go to ecole hotelier in lausanne, switzerland. i know it's basically the best school for hotel management but i have no idea..

YES! I want so badly to travel and work in other countries.

I was. My sister and I used to bake all the time. She's going to school for business management and one day we want to open a bakery together.

I learned a lot of math, science, and history. All baking related haha. But I also got to meet all sorts of people from all walks of life an they taught me a lot just about life :) a lot of them are still some of my best friends.

I say go for it! The hospitality industry is awesome! Hotels really take care of their people and you get the opportunity to travel. My hotel is actually going to send me to CIA for extended education and I don't have to pay a cent!!

Honestly, waking up at 3am :( that and the fact that my body is failing on me and I try so hard all day and usually push a little too far. But I'm still here :D

Skydiving. I'm terrified but it looks amazing!

Graduating from culinary school and starting my career!!

Hopefully next year! :D

Wedding is March 19, 2011 and I'm pretty sure she said it's going to be in nacogdoches texas...she lives in Kingwood, Texas near Houston and he lives either in Houston as well or in College Station, I don't remember, but they both went to A&M for undergrad.

November 19, 2011! We haven't made it totally official because he's still saving up for my ring lol but that's the date we've chosen :D

Nacodoches is five hours from San Antonio, but if you'll have the spare time I can get off from work a few days and drive out there. Or you can come here. You can use my hotel discount!
